WEll anything that has only flours as the glutein source, can just be replaced with oat flours ofc they act bit differently from basic flours, but it will work
oat cookies, basically 1dl of flours *1 tablespoon of flours 2 dl of oatmeals 50g of butter 1-2dl of sugar, to your taste
melt the sugar into caramel mix in butter mix in flours and oatmeals oh and 1 teaspoon of baking powder or baking soda, hmm soda works better imo and then finally 1 egg mix, and then spread on a plate and in over on about 200 degrees for 5-10 minutes

I'd also be worried about it maybe having post-work stress. Might be okay for a few months but then it slowly comes around on you how much you dread the next time the phone rings and someone's asking you to don the spandex for the kids again. I can definitely empathize with your situation. I've had people I've gotten along well with and had what I thought were "good friend" conversations with, only for them to show a facet of toxicity or unpleasantness later on. I try to not let it get to me much since I think everyone has a fault like that, and also because I know I can seem abrasive and contribute to the situation that makes them be unpleasant to me. But it's definitely disheartening. Socializing with people can be a minefield some times.

I'm gonna second Moon here. It's definitely a good thing to not give up here. The burns from bad social encounters might be rough in the moment, but they can heal. And eventually you'll find people who can click. There's seven billion people in the world, plenty good odds there's loads who can get along with you regardless of where you are in the world.
