Well each boss in Monster hunter has a gauge that needs to met inorder for you to inflict status effects. once you hit the correct point they get inflicted.
Poison is can be tricky because they build up resistance once they have already poisoned. same with it you mount monsters if you mount once they become harder to mount.
On that note sleeping poison in say elderscrolls is silly too especially when you can apply it to anything those kinds of poisons/drugs only make sense when you inflict only a minor wound, like with a blowdart etc but when you hit them with a giant 2h sword or a crossbowbolt through their kneecap....
