It always goes for an attack right when you're finishing a strike and is almost /// super hard to trick into running into my charge attacks.

I'm not sure if it entirely relates to your situation, but early on, the quest time limits they give you are really way, way more time than you really need, unless you're also running around and skinning every dead little creature and harvest every resource node.
If you're not short for time, it's not a bad idea to not attack for half a minute or so to focus on not getting hit.
