This girl Souma's cooking off against might be a soba master.
But soba is a pretty common staple in Japanese eateries like the one Souma grew up in.

I watched a video a few weeks back on the making of soba noodles.
It's a pretty excruciatingly careful process if you're making it from pure buckwheat flour like she probably is.
Buckwheat doesn't have gluten so it doesn't form the elasticity that's common to dough that is used to make noodles or pasta.
So the dough, once rolled super thin, tears extremely easily if you're not cautious with it.

I hope it goes back to Souma not going along with the super-pretentious fine cuisine so much.
His more homely cooking was a nice appeal to this series at first.
